Maruya-Honten is a specialty restaurant dedicated to Hitsumabushi, Nagoya's celebrated style of eel—one of Japan's treasured traditional dishes. Our secret sauce, carefully preserved and enriched over time, is based on tamari soy sauce brewed in cedar barrels by a historic producer, blended with several types of soy sauce and mirin from the Mikawa region in a perfectly balanced mix. Paired with eel grilled until the fat is rendered and the skin is crisp, it delivers a rich, full-bodied flavor.
